Ingredients
  • 3 bell peppers, any color
  • 12 to 16 oz wholegrain rotini pasta, I used Trader Joes, vegetable pasta. It kinda looks like rotini, but it's smaller.
  • 4 oz Butler's Soy Curls (½ a bag)
  • 16 oz mushrooms sliced
  • 1 med Onion (diced)
  • 4 cloves Garlic (minced)
  • 1 Tbs Soy Sauce (low sodium)
  • 1 Tbs Worcestershire Sauce (look for a vegan variety)
  • 2 tsp Thyme
  • 1 tsp Rosemary
  • ½ cup White Wine (you can sub veg broth if needed)
  •  
  • Cashew Cream
  • Servings 8
  • ½ cup cashews boiled for 10 minutes. discard water.
  • 1 cup water
  • 1 cloves garlic, roughly chopped
  • ¼ teaspoon sea salt + more to taste
  • Freshly cracked black pepper to taste
  • 1 tablespoons nutritional yeast
  • 1 tablespoons lemon juice
  • ¼ teaspoon onion powder
