Chocolate Chip Pumpkin Bread
A touch of cinnamon helps blend the flavors in this tender pumpkin chocolate chip.

Ingredients

  • 1½ cups All-Purpose Flour
  • 1½ teaspoon baking powder
  • 1 teaspoon Pumpkin Pie Spice
  • ½ teaspoon Salt
  • subheading: Wet Ingredients:
  • 2 eggs
  • 1 cups Sugar
  • 1 cup canned Pumpkin Puree
  • ¾ cups Coconut Oil
  • subheading: Optional:
  • ¾ cup Semisweet Chocolate Chips
  • ¾ cup Crushed Walnuts
Steps
  1. Preheat oven to 350°F.
  2. In a large bowl, combine the flour, pumpkin pie spice, salt and baking powder.
  3. In a separate bowl, beat the eggs, sugar, pumpkin and oil.
  4. Stir the wet ingredients into the dry ingredients just until moistened.
  5. Fold in chocolate chips and/or walnuts.
  6. Pour into a greased 8" X 4" loaf pan.
  7. Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 10 minutes before removing from pan to wire racks.
