I wish to place a Nicer Picture of this Meal here:) The Recipe is Superb, it has Flaked Almonds, Lemon and Honey as well.
Ingredients
  • 1 courgette, trimmed and cut into 5cm chunks
  • 1 red pepper, cut into 5cm chunks
  • 1 aubergine, trimmed and cut into 5cm chunks
  • 1 large carrot, scrubbed and cut into 2.5cm chunks
  • 4 tbsp olive oil
  • 1 red onion, finely chopped
  • 3 garlic cloves, finely sliced
  • 15g fresh coriander, stalks finely chopped, leaves whole
  • 3 tomatoes, finely chopped
  • 2 tbsp tomato purée
  • 2 tsp ras el hanout
  • 1 tbsp clear honey
  • ½ lemon, juiced
  • 320g couscous
  • 120g cooked green lentils, from a 390g tin, drained and rinsed
  • 100g dried apricots, halved
  • 10g flaked almonds (optional)
  • 50g pomegranate seeds (optional)
