Moroccan Chickpea Barley Salad
Ingredients
  • 1 tbsp olive oil
  • 1 ½ cups barley
  • 1 ½ cups veggie broth
  • 1 ½ cups water
  • 1 tsp salt
  • 1 (15 oz) can chickpeas or 1 cup raw chickpeas soaked, drained and cooked
  • 1 red bell pepper, diced
  • ¼ cup shelled pistachio nuts
  • 1 cup dried apricots, diced
  • 3 scallions, chopped
  • 1 cup chopped parsley
  • zest and juice of a lemon
  • 1 recipe Ras el Hanout spice mix (below)
  • salt to taste
  • subheading: Ras el Hanout:
  • 1 tsp black pepper
  • 1 tsp cardamom
  • ¼ tsp cayenne
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • ½ tsp turmeric
