Raw Carrot Salad for Hormone Balance
Ingredients
  • subheading: For The Honey Lime Dressing:
  • 2 tbsp white or apple cider vinegar
  • 1 tbsp lime juice (can sub for lemon)
  • 1 tbsp dijon mustard
  • 2 tbsp raw honey (can sub for pure organic maple syrup)
  • ¼ cup extra virgin olive oil (can sub for avocado oil)
  • ½ tsp Celtic sea salt
  • subheading: For My Go-To Raw Carrot Salad:
  • 1 to 2 large organic raw carrots, outer layer peeled and discarded
  • 1 to 2 tbsp crunchy nuts or seeds such as pistachio, peanut, sesame, etc.
  • Fresh herbs such as cilantro, mint and basil
  • Lime wedge for garnish
  • Drizzle of honey lime dressing (see recipe above)
  • subheading: For My Sweet Raw Carrot Salad:
  • 1 to 2 large organic raw carrots, outer layer peeled and discarded
  • ½ organic apple, shredded or chopped
  • 1 to 2 tbsp dried raisins or cranberries
  • 1 to 2 tbsp toasted walnuts or pecans
  • 1 to 2 tbsp coconut flakes or shreds
  • Substitute lemon for lime in honey lime dressing and drizzle (see recipe above)
  • subheading: For My Hearty Lunch Raw Carrot Salad:
  • 2 large organic raw carrots, outer layer peeled and discarded
  • 2 jammy eggs (aka eggs boiled at 4 to 5 minutes, then cooled immediately)
  • Optional handful shredded chicken
  • ½ cucumber, peeled and sliced
  • ¼ cup cherry tomatoes, halved
  • ¼ organic red bell pepper, sliced
  • ¼ to ½ avocado, peeled, pitted and sliced
  • 2 tbsp organic creamy feta cheese
  • 1 tbsp shelled hempseed or everything bagel seasoning
  • 1 to 2 tbsp fresh herbs such as parsley, basil or dill
  • Drizzle of honey lime dressing (see recipe above)
