Spiced Coq Au Vin {Red Wine Braised Chicken}
Ingredients

  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • 1 tablespoon grapeseed or canola oil
  • 1 yellow onion, peeled and quartered
  • 3 plum or roma tomatoes, halved
  • 3 cloves garlic, peeled
  • 3 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • 1 cup red wine
  • 1 cup water

  • note: Chinese Five Spice is a traditional Chinese blend of ground star anise, Szechuan peppercorns, cinnamon, cloves and fennel seeds. It can be found at most grocery stores or specialty shops.
