Glazed Gingerbread Loaf (Vegan Gluten-Free)

  • ¾ cup (190g) non-dairy milk
  • ½ cup (130g) almond butter (or any nut/seed butter)
  • ¼ cup (80g) molasses
  • 1 ½ tsp ginger
  • 1 tsp cinnamon
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • Pinch of salt
  • 1 ½ cup (165g) oat flour (*see notes for grain-free option)
  • ½ cup (70g) tapioca starch (can sub arrowroot or cornstarch)

  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 to 3 tbsp non-dairy milk
