Q&E Beef Vegetable Soup
Another variation of Dad's quick and easy pantry soups. He makes various soups using just cans and leftover meat using a base of a can each of broth, V-8, beans, tomatoes and a green veg.

Ingredients
  • 1 can broth, beef or chicken
  • 1 small can V-8
  • 1 can diced tomatoes (Rotels or fire roasted is delicious)
  • 1 can kidney or white northern beans
  • 1 can green beans
  • 1 can mixed veggies (corn, carrots, peas, green beans, etc)
  • Shredded cheddar, optional for serving
Steps
  1. Heat all ingredients on the stove or in the microwave.
  2. Serve with shredded cheddar
Notes
  • This is also delicious if you microwave a whole potato to dice and add to the soup.
