Coconut Lime Quinoa and Asparagus
Ingredients
  • 4 tbsp vegetable broth (preferably homemade, no salt added)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp ground turmeric
  • ¼ tsp salt (optional)
  • 13.50 oz light coconut milk (1 BPA-free can)
  • 1 large lime (juiced)
  • ½ cup water
  • 1 cup organic quinoa (rinsed)
  • 2 cups asparagus (chopped into 1” pieces)
  • ½ cup cilantro (chopped)
  • 1 green onion (chopped, white and green portions)
  • ¼ cup pistachios (shelled, unsalted)
