  • ⅔ cup (85g) all-purpose flour

  • 4 tablespoons (60g) sugar
  • 4 tablespoons (60ml) lemon juice
  • 3 tablespoons (45ml) water
  • 1 tablespoon cornstarch (aka cornflour)
  • 1 tablespoon soy milk
  • 1 teaspoon lemon zest
  • ¼ teaspoon vanilla extract
  • 1 tablespoon vegan butter
  • pinch of salt
  • pinch of turmeric (optional for colour)
