Cauliflower Mac and Cheese
Ingredients
  • 1 large head cauliflower
  • 200g uncooked gluten-free pasta, shape of your choice
  • 1 tsp olive oil, to coat the pasta
  • 1 TB olive oil - this is my favorite brand because it really is 100% pure olive oil
  • 1 onion, peeled and finely diced
  • 2 cloves garlic, peeled and finely chopped
  • 1.4oz unsalted butter (40g)
  • 2 TB cornflour
  • 2 cups unsweetened almond milk
  • Pinch nutmeg
  • Salt and white pepper
  • 6.5oz strong Cheddar, grated (185g), for the sauce
  • 3oz strong Cheddar, grated (85g), for the top
  • 3 spring onions, finely sliced
  • Freshly ground black pepper
