Thai Coconut Green Curry Seafood Soup
Ingredients
  • 1 quart fish broth
  • 2 cans coconut milk (15 ounces each) - find good quality coconut milk here
  • 1 pound shrimp, peeled and halved or cut into thirds
  • 1 pound white fish, cut into bite-sized pieces
  • 1 TBSP coconut oil -find good quality coconut oil here
  • 2 to 3 cloves garlic, chopped
  • 2 to 3 inch piece ginger, chopped fine
  • 1 stalk lemongrass, upper half removed, chopped into 1 inch pieces
  • 1 regular red pepper, cut into strips
  • 2 to 3 tsps Thai green curry paste - find Thai green curry paste here
  • 2 to 3 tsps coconut sugar or organic cane sugar, optional -find organic coconut sugar here
  • Fish sauce or soy sauce, to taste - find good quality fish sauce here
  • Lime wedges
  • Cilantro
