Herb Artichoke White Bean Dip
Ingredients
  • 1 (14 ounce can) Artichoke Hearts, drained, excess juice squeezed out
  • 1 (15 ounce can) White Beans, rinsed and drained (about 1 ½ cups beans)
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Lemon Juice
  • 1 tablespoon Fresh Herbs, I used thyme and oregano
  • ¼ cup Feta Cheese, optional
  • Salt and Pepper, to taste
