Zoodle Bowl with cashew pesto
An easy lunch dish if you think one hour ahead
Ingredients
  • Zoodles - spiralised zuchinni
  • Cherry tomatoes/mixed greens
  • Shredded chicken (optional)
  •  
  • PESTO SAUCE
  • Cashews - soaked overnight OR 1 hour in boiling water
  • Avocado
  • Lemon
  • Garlic
  • Olive oil
  • Salt/garlic salt to taste
  • Kale/spinach powder (optional)
Steps
  1. 1. Spiralise zuchinni and add shredded chicken to the bowl
  2. 2. Blend together:  soaked cashews, avocado, lemon juice, garlic, olive oil + green powder
  3. 3. Toss through the Zoodles.
  4. 4. Serve with cherry tomatoes/mixed greens
Notes
  • Pesto can be used as a dip.
