  • boiling water  167g   / ⅔ cup
  • salt 2g  / ¼ teaspoon
  • warm water  140g  / ½ cup+1 tablespoon
  • oil 27g /  2 tablespoon

  • beef fillings:
  • ground beef 625g
  • five-spice powder 2g  /  ½ teaspoon
  • Sichuan peppercorn powder 2g / ½ teaspoon
  • white pepper powder 2g / ½ teaspoon
  • regular soy sauce  30g  /  2 tablespoons
  • salt  8g  / 1 teaspoon
  • ginger  10g  / 1teaspoon
  • green onions 80g  /  1 cup
  • warm water  125g  / ½ cup
  • Yukon gold potatoes  500g  / 4 small size

  • Alan Lin said meat is too loose. Possible solution is to reduce the volume of water going into beef by adding 1 egg and rest up to the ½ cup?
