  • 1 ½ tablespoons (9g) dried egg white powder or Wilton's meringue powder
  • ½ teaspoon (1g) lemon juice (optional but recommended)**

  • 2 ¼ cup (509g) unsalted butter, cold from the fridge
  • 3 ½ tablespoons (18g) dried milk powder
  • 1 ½ tablespoons (21g) water
  • 1 cup plus 2 tablespoons (255g) cream cheese, full fat*
  • 1 cup plus 2 tablespoons (225g) white granulated sugar
  • 2 ¼ tablespoons (14g) dried egg white powder or Wilton's meringue powder
