Babi Chin/Braised Pork Belly in Fragrant Spices (No Rempah)
Ingredients
  • 500 g (1.1 lb) pork belly, cut into 1 cm (½ inch) thick
  • 3 tbsp cooking oil
  • 1 cup shallots, peeled and coarsely chopped
  • 10 cloves garlic, peeled and sliced
  • 5 pieces star anise
  • 1 tbsp ground coriander seeds/serbuk ketumbar
  • 10 dried shiitake mushrooms, soaked for 20 mins then halved
  • 1 tbsp dark soy sauce
  • ½ tsp salt or to taste
  • 1 tbsp sugar or to taste
  • ¼ tsp ground white pepper
  • 1 liter water
  • subheading: For garnish~:
  • 2 red chillies, sliced
  • some fried garlic slices
