Easy Moroccan Chicken Couscous
Ingredients

  • 3 carrots (cut into 1-inch pieces)
  • 2 celery ribs (cut into 1-inch pieces)
  • 1 red onion (large, halved and cut into ½-inch thick slices)
  • handful of raisins (optional)

  • 1 cup couscous
  • 1 cup water (or chicken broth)
  • kosher salt
  • ½ teaspoon ground cinnamon
  • 1 cup fresh parsley (chopped)
