White Bean Chicken Chili
Ingredients
  • ¾ lb. Boneless, Skinless Chicken Breast, cubed
  • ½ t. Salt
  • ¼ t. Pepper
  • 2 T. Olive Oil
  • 1 Medium Onion, chopped
  • 4 Garlic Cloves, minced
  • 2 t. Dried Oregano
  • 1 t. Ground Cumin
  • 2 cans Great Northern Beans, rinsed and drained
  • 3 c. Chicken Broth
  • Shredded Cheddar Cheese
Steps
  1. Sprinkle Chicken with salt and pepper.
  2. Cook in oil for 2 min.
  3. Stir in onion and garlic.
  4. Cook for additional 2 min.
  5. Sprinkle with Oregano and Cumin.
  6. Cook for until chicken is browned.
  7. Transfer to 3 quart slow cooker.
  8. In a small bowl mash 1 cup beans, add ½ c. broth.
  9. Stir until blended, add to slow cooker
  10. Add remaining beans and broth.
  11. Cover and Cook on low for 3 3/12 hours.
  12. Stir before serving.
  13. Sprinkle with cheese.
