  • 2 cups partially cooked rice noodles (I use precooked Kame brand Thai Rice Noodles)
  • ⅓ cup sliced carrots
  • ⅓ cup chopped broccoli
  • ⅓ cup snow peas
  • ⅓ cup fresh spinach leaves
  • ¼ cup soy sauce - reduced sodium
  • 1 cup water or veggie broth
  • ⅓ cup brown sugar
  • 2 tsp garlic
  • 1 tbs corn starch
  • ½ tsp fresh ginger
  • pepper to taste
