Delicious New Orleans Instant Pot Gumbo
Ingredients
  • ½ lb shrimp - peeled and deveined
  • 1 tsp Creole seasoning - or Cajun seasoning
  • ½ cup olive oil - 2 Tbsp extra for sauteing
  • ½ lb Andouille sausage - or smoked sausage, cut into ¼ inch slices
  • 1 lb boneless skinless chicken thighs - cut into bite size pieces
  • ½ cup all-purpose flour
  • 1 cup onions - diced
  • 1 cup green bell peppers - diced
  • 1 cup celery - diced
  • 1 Tbsp garlic - minced
  • 4 cups chicken broth
  • 1 tsp  white pepper
  • 1 tsp black pepper
  • 1 tsp cayenne pepper - or to taste
  • 1 tsp dried thyme
  • 1 tsp salt - or to taste
  • 1 tsp brown sugar
  • 1 tsp  worcestershire sauce
  • 2 tsp lemon juice
  • 2 bay leaves - (small) or 1 large
  • 2 cups frozen okra
  • 14.5 oz. diced tomatoes - (1 can) or 2 cups chopped tomatoes
  • 2 Tbsp green onions - green parts only,  sliced thinly
  • Chopped parsley to garnish
