Ingredients
  • 2 pounds very green tomatoes, sliced ΒΌ" - 3/8" thick. Cut first and place on paper towels to absorb any moisture.

  • 2 cup all-purpose flour, DIVIDED
  • 2 large eggs
  • 2 tablespoons water
  • 2 cup yellow cornmeal
  • Seasoning for cornmeal mixture: cayenne, black pepper and paprika or Creole seasoning
  • 1 cup canola oil or as needed
  • Salt to taste immediately from the skillet.
