Smitten Kitchen's Granola Biscotti
Ingredients
  • 85 g unsalted butter (melted)50 g raw sugar50 g brown sugar2 eggs½ tsp vanilla extract130 g flour1 tsp baking powder¼ tsp baking soda½ tsp salt130 g rolled oats45 g sliced almonds40 g unsweetened shredded coconut75 g dried cranberries75 g dried apricots
  • ovenlarge bowlhand mixer with beatersrubber spatula
  • Position a rack in the center of the oven, and heat to 165°C/325°F. Whisk melted butter and sugars in the bottom of a large bowl with a hand mixer. Whisk in the eggs and vanilla, then add in the flour, baking powder, baking soda, and salt. Stir in the rolled oats, sliced almonds, coconut, and dried fruit with a rubber spatula.
