Tomato Florentine Soup
Ingredients
  • ½ cup water
  • 1 large onion, chopped
  • 1 celery stalk, chopped
  • 3 garlic cloves, minced
  • 5 cups low sodium or no-salt-added vegetable broth
  • 3 cups diced fresh tomatoes, undrained or 1 (26 ounce) carton diced tomatoes (see note)
  • 6 ounces (¾ cup) tomato paste (see note)
  • 3 tablespoons raisins, minced
  • 1 ½ cups cooked great northern beans or 1 (15 ounce) can low sodium or no-salt-added great northern beans, drained
  • 5 ounces spinach
  • 5 ounces baby kale
  • ¼ teaspoon ground black pepper, or to taste
  • ¼ cup nutritional yeast
  • 6 medium fresh basil leaves, finely chopped
