  • 2 large eggs, at room temperature; separated
  • 1 ½ cups (340g) buttermilk, at room temperature
  • 2 tablespoons (28g) butter, melted
  • 2 tablespoons (25g) vegetable oil, for added crispness; optional, but good
  • 1 cup (120g) King Arthur Unbleached All-Purpose Flour
  • 4 teaspoons yellow cornmeal or cornstarch
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon table salt*
  • ½ teaspoon granulated sugar
  • note: hanks to reader feedback, we've decreased the salt in the recipe from its original ½ teaspoon to ¼ teaspoon.
