Cauliflower Pakoras
Ingredients
  • 2 cups chickpea flour (8 ½ ounces; 240g)
  • 2 teaspoons Diamond Crystal kosher salt; for table salt, use half as much by volume
  • 1 teaspoon ground red chile powder, such as Kashmiri
  • 1 teaspoon ground turmeric
  • 1 teaspoon homemade or store-bought garam masala
  • 1 cup (240ml) cold water
  • 1 large head cauliflower, about 1 ½ pounds (680g), separated into bite-sized pieces, thick stems discarded
  • 4 cups (946ml) vegetable oil, for frying
  • Green chutney, for serving
