Julia Child's Lobster Thermidor Recipe with Mushrooms and Cognac

  • 5 Tb. butter + 4 Tb butter separated
  • 6 Tbsp. flour
  • 1 Tbsp. cream + ½ c cream separated
  • 1 Tbsp. dry mustard
  • 2 egg yolks
  • Pinch cayenne pepper
  • ⅓ cup cognac
  • ½ cup grated Parmesan or Swiss cheese
