Trussed Beef Pot Roast with Vegetables
Ingredients
  • 1,2kg beef silverside roast
  • 2 tbsp. vegetable oil
  • salt and pepper
  • ~2 medium parsnips (200g), halved lengthways and peeled
  • 2 turnips, quartered
  • 1 cup baby carrots, peeled
  • 2 red onions, quartered
  • 1 cup orange sweet potato, cut into chunks
  • ½ cup red wine
  • 2 cups beef stock
  • 4 sprigs rosemary, plus extra sprigs to garnish
