  • ½ cup shredded coconut
  • ½ cup chopped walnuts or pecans
  • ¼ cup sunflower seeds (optional)
  • 3 large eggs
  • ⅔ cup vegetable oil or melted coconut oil
  • ¼ cup orange juice
  • 2 tsp vanilla extract
