Ingredients
  • 8 large eggs
  • ½ cup milk
  • ¼ t salt
  • ¼ t garlic powder
  • ¼ t black pepper
  • ¼ cup chopped onion
  • ¼ cup chopped green pepper
  • ¼ to ½ cup cooked bacon, chopped
  • ½ cup spinach, chopped
  • ¼ cup chopped tomato
  • 1 cup of shredded cheese (italian or cheddar)
  • 1tsp olive oil
Steps
  1. Preheat oven to 350 degrees. Spray a 12 muffin tin with cooking spray. Add olive oil to a frying pan and heat over medium heat. Add vegetables and cook for about 5 minutes until softened. Whisk eggs, milk, salt, pepper, and garlic powder in a bowl. Pour egg mixture evenly into each portion of the muffin tin. Add a spoonful of veggies in each and add some bacon to each. Add cheese to each and mix. Cook in oven for 20 minutes or until slightly browned.
