Poc Chuc, Mayan Grilled Pork

Ingredients

  • ¼ teaspoon black pepper
  • ¼ teaspoon dried oregano (Mexican, if possible)
  • ⅛ teaspoon ground allspice
  • ⅛ teaspoon ground clove
  • subheading: MAYAN PICO DE GALLO:
  • 4 plum tomatoes, diced
  • ½ cup sour orange juice (for substitute, see above)
  • salt
  • 1 teaspoon dried oregano (Mexican, if possible)
  • 2 red onions, diced
  • 1 to 2 habaneros, minced
  • 1 cup chopped cilantro
