Mushroom Soup
Vegan version of Hungarian mushroom soup
Ingredients
  • 2 tblsp v-butter
  • 2 cup finely diced white onion
  • 1 tblsp crushed garlic
  • 1.5 lbs (.6 kg) sliced mushroom
  • 2 tsp fresh dill or 3 tsp dried dill
  • 1 tblsp paprika
  • 2 tblsp Flour
  • 2 cups vegetable stock
  • 1 cup v-milk
Steps
  1. Heat butter in pan & add diced onion & cook over medium heat for 5 mins until translucent
  2. Add garlic & mix
  3. Add mushrooms, paprika & dill & cook around 10 mins allowing mushroom to release moisture
  4. Add lemon juice & flour & stir well cooking off flour for several minutes
  5. Add stock, cover & cook for 10 minutes over medium heat at low simmer
  6. Remove from heat & stir in v-milk
  7. Salt & Pepper to taste
