Individual Beef Wellingtons
  • 2 tablespoons olive oil
  • 2 (5-ounce) filets mignons, each about 1 ½ inches thick

  • 1 large shallot, finely chopped

  • 1 teaspoon honey
  • ¼ cup medium-bodied, acidic red wine, such as cabernet franc or pinot noir
  • 2 tablespoons heavy cream
  • 1 sheet frozen puff pastry, thawed but still cold (half of a 17.3-ounce box)
  • 1 large egg
