Roast Tomato Soup

Ingredients
  • 2kg tomatoes
  • Dash salt & pepper
  • Sprinkle of Italian herbs
  • 2 litre stock of choice
  • Good handful of basil
  • 5 garlic cloves
  • 2 onions
Steps
  1. 1. Lay halved tomatoes on a tray, sprinkle with salt/pepper and herbs. Roast in oven for 25 minutes on 200°.
  2. 2.Once tomatoes are ready, put all ingredients in saucepan and simmer for 30 minutes until it reduces.
  3. 3. Blend and enjoy
