Variation of fathead dough for thin tortilla wraps

  • Ladies, I think I've found the perfect keto wrap recipe. I experimented today and it was amazing; it's a variation of the fathead dough, just easier. I mixed half cup of almond flour, half cup of shredded mozzarella and 1 egg. It will be more like a batter than a dough: it doesn't matter, it's easier to spread in between two parchment papers sheets. Spread it really thin, then in the oven at 200 degrees with grill on, just for 5 minutes until it's crisped up and light brown. Out of the oven, wait one minute then you can use it as a wrap or even super thin pizza base. I spread some cream cheese, arugula and organic smoked salmon. It was super yum and FAST. I hope you enjoy it as much as I do, for me it's a game changer for lunch :)
