  • 1 medium sweet potato, chopped into small chunks
  • 1 lb brussels sprouts, quartered

  • ¼ teaspoon ground pepper + more to taste
  • 1 yellow onion, chopped
  • 1 to 2 cloves garlic, minced
  • 3 to 4 chicken or turkey breakfast sausage, chopped, I used Bilinski chicken sausage
  • 2 cups baby spinach
  • 1 Tablespoon balsamic vinegar
  • ½ Tablespoon maple syrup, optional
  • 6 large eggs
  • ⅓ cup raw pecans
  • hot sauce, for serving, optional
  • fresh thyme, for serving
