Pink Smoky Baked Tofu Is for Lovers

  • What You Need
  • ½ small beet, peeled and sliced as thinly as possible (use a mandoline if you have one)
  • 2 pounds firm/extra firm tofu, well pressed
  •  
  • ⅓ cup tamari
  • 1 tablespoon extra virgin olive oil
  • 3 to 5 medium cloves garlic, minced
  • 2 teaspoons liquid smoke
  • 2 teaspoons smoked salt
  • 3" sprig fresh rosemary, chopped
  • 2 tablespoons maple syrup
  • ⅓ cup rice vinegar
