  • 1 teaspoon gluten free xanthan gum
  • Pinch of salt
  • 8 ounces room temperature mascarpone cheese
  • ½ cup unsalted butter melted
  • 3 large eggs lightly beaten
  • 2 tablespoons coconut milk
  • ½ teaspoon almond extract
  • Espresso and rum soak
  • 1 cup cooled espresso or organic strong brewed coffee
  • 1 ounce of rum
  • Cream filling
  • 4 pasteurized eggs yolks and whites separated
  • Pinch of salt
  • ¼ cup xylitol or other keto sweetener of choice
  • 1 ½ cups mascarpone cheese
  • 1 teaspoon vanilla extract
  • Unsweetened cocoa powder for dusting
