This recipe is for a pie shell that needs to be baked before filling is added.

Servings: Enough for 1 9-in. 1-crust pie
Ingredients
  • 1 c. flour
  • ⅓ c. shortening
  • 2 tbsp. water
Steps
  1. Preheat oven to 475° F.
  2. Cut bulk of shortening into flour with pastry blender or 2 knives till mixture looks like meal; then cut in remaining shortening till the particles are size of giant peas.
  3. Sprinkle 2-tbsp. water over dough, & mix just enough to hold dough together.
  4. Gather dough into ball & let stand for a few minutes.
  5. Roll out on lightly floured cloth covered board to fit 9-in. pie plate.
  6. Place dough into pie plate, leaving ½-in. hanging over edge.
  7. Build up fluted edge.
  8. Prick bottom of crust thoroughly with fork to prevent puffing.
  9. Bake 8 to 10 mins., then cool.

  • I inherited this recipe as part of my mother-in-law's collection. She'd apparently saved this out of a flour package.
