( hymelskajunkitchen ) Chicken & Andouille Spaghetti is a hearty and flavorful dish that combines tender chicken thighs, smoky Andouille sausage, and a rich, Cajun-inspired tomato-based sauce. Enhanced with a medley of aromatic vegetables, Cajun seasonings, and hard-boiled eggs for an extra layer of texture, this recipe is a true Southern comfort classic. Served over perfectly cooked spaghetti noodles and optionally topped with Parmesan cheese, it’s a satisfying and delicious meal that’s perfect for family dinners or special occasions.

Ingredients
  • 1 lb boneless skinless chicken thighs
  • 1 lb Andouille sausage
  • 6 boiled eggs
  • 1 onion
  • 1 bell pepper
  • 2 sticks of celery
  • 2 tbsp minced garlic
  • 1 (32oz) Cajun Power spaghetti sauce
  • 1 (15oz) tomato sauce
  • 1 (6oz) tomato paste
  • 1 (32oz) box of chicken broth
  • 1 tbsp Cajun Power garlic sauce
  • Cajun seasoning and Cajun trinity powder
  • 1 lb of spaghetti noodles
Steps
  1. Oil your pot and put it on medium-high heat. Drop in your Andouille sausage to start browning it. Once browned, pull and set aside.
  2. Drop in your chicken, season with Cajun seasoning and trinity powder. Cook until it turns light brown and isn’t raw. Pull and set aside with the sausage.
  3. Drop in a little butter and stock into the pot, then add garlic, onion, bell pepper, and celery to cook down.
  4. Return the meat to the pot. Add the spaghetti sauce, tomato sauce, tomato paste, and chicken stock. Add the Cajun Power garlic sauce and season to taste.
  5. Boil the eggs for 10 minutes, peel, and set aside.
  6. Cook the noodles in another pot until tender.
  7. Serve with noodles, top with Parmesan cheese.
Notes
  • Browning for Depth: Brown the chicken thighs slightly longer to build a deeper flavor base before setting them aside.
  • Smoked Paprika: Add a dash of smoked paprika for an extra smoky kick that complements the Andouille sausage.
