- 1 lb boneless skinless chicken thighs
- 1 lb Andouille sausage
- 6 boiled eggs
- 1 onion
- 1 bell pepper
- 2 sticks of celery
- 2 tbsp minced garlic
- 1 (32oz) Cajun Power spaghetti sauce
- 1 (15oz) tomato sauce
- 1 (6oz) tomato paste
- 1 (32oz) box of chicken broth
- 1 tbsp Cajun Power garlic sauce
- Cajun seasoning and Cajun trinity powder
- 1 lb of spaghetti noodles
Steps
- Oil your pot and put it on medium-high heat. Drop in your Andouille sausage to start browning it. Once browned, pull and set aside.
- Drop in your chicken, season with Cajun seasoning and trinity powder. Cook until it turns light brown and isn’t raw. Pull and set aside with the sausage.
- Drop in a little butter and stock into the pot, then add garlic, onion, bell pepper, and celery to cook down.
- Return the meat to the pot. Add the spaghetti sauce, tomato sauce, tomato paste, and chicken stock. Add the Cajun Power garlic sauce and season to taste.
- Boil the eggs for 10 minutes, peel, and set aside.
- Cook the noodles in another pot until tender.
- Serve with noodles, top with Parmesan cheese.
Notes
- Browning for Depth: Brown the chicken thighs slightly longer to build a deeper flavor base before setting them aside.
- Smoked Paprika: Add a dash of smoked paprika for an extra smoky kick that complements the Andouille sausage.
- Fresh Herbs: Finish with fresh parsley or green onions for a burst of freshness
- Protein Variety: Substitute or add shrimp to the dish for a seafood twist.
- Spice Level: If you prefer more heat, add cayenne pepper or a few dashes of hot sauce to the sauce.
- Cheese Upgrade: Try using freshly grated Parmesan or Pecorino Romano for a creamier, sharper flavor.
- Sauce Texture: Simmer the sauce longer to thicken it and concentrate the flavors further.
- Egg Presentation: Slice the boiled eggs and serve them as a garnish for better presentation.
- Noodle Upgrade: Replace spaghetti with fettuccine or linguine for a different texture.
- Serve with garlic bread or a French baguette to soak up the rich sauce.
- Pair with a simple green salad with a vinaigrette dressing to balance the dish's richness.
