Sausage and Peppers One-Pot Pasta (NYT)
Ingredients
  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • Salt
  • 2 large bell peppers, thinly sliced (I used ⅔ of a TJ's bag of fire roasted bell peppers and onions - use whole bag next time).
  • 1 pound loose raw Italian sausage
  • 4½ cups chicken broth
  • 1 pound shell pasta (used smaller "shells and cheese" size and was good.
  • 4 ounces sliced provolone cheese
  • ⅓ cup drained, chopped pickled peppers, such as cherry, banana or pepperoncini
