Eggplant Tomato Curry
Vegan Eggplant & Tomato Curry

Ingredients
  • Oil
  • 4 Eggplants
  • ½ tsp Cardamon
  • ½ tsp Cumin Seeds
  • ½ tsp Green Peppercorn
  • Pinch red Chilli
  • 1 White Onion
  • 1 tbsp Garlic/Ginger Paste
  • 2 cups fresh tomatoes (skin removed)
  • ½ cup fresh Cilantro
Steps
  1. Prick Eggplant & wrap in foil & roast for 1½ hours
  2. Heat oil & add Cardoman + Cumin + Peppercorns + chilli & temper
  3. Add onion & cook 10 mins
  4. Add Ginger/Garlic Paste & cook 1 min
  5. Add tomatoes & cook to reduce
  6. Scoop out meat from Eggplant & add
  7. Add Cilantro & cook 5 mins
