Slow-Cooker Brat and Sauerkraut Soup
Ingredients
  • 1 pound uncooked bratwurst, cut into ½-inch-thick slices
  • 1 pound tiny new red potatoes, cut into quarters
  • 2 small onions, cut into ¼-inch wedges or coarsely chopped
  • 1 cup sliced celery
  • 2 cloves garlic, minced
  • 3 bay leaves
  • 1 14 ½ - ounce can Bavarian-style sauerkraut
  • 2 14 ½ - ounce cans lower-sodium beef broth
  • 1 tablespoon spicy brown mustard
  • 1 tablespoon cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon fennel seeds, crushed
  • ½ teaspoon caraway seeds
  • Sour cream (optional)
