Carrot Ribbon Salad
Ingredients
  • 3 pitas, torn into 1-inch pieces
  • ¼ cup plus 2 tablespoons olive oil, divided
  • 1 ½ teaspoons kosher salt, divided
  • 2 bunches medium carrots (about 10)
  • 2 garlic cloves, grated
  • Finely grated zest of 1 lemon
  • Juice of ½ lemon
  • 1 teaspoon pomegranate molasses
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon ground sumac
  • ¾ cup golden raisins
  • ¼ cup lightly packed mint leaves, torn in half by hand
  • ¼ cup lightly packed cilantro leaves, torn in half by hand
