Baked Asparagus Fries
Ingredients
  • FOR GARLIC SAUCE •
  • ¼ cup mayonnaise
  • ½ to 2 garlic cloves, minced
  • 1 tsp lemon zest
  • ½ tsp paprika
  • ⅛ tsp cayenne
  • ¼ cup Greek yogurt
  • FOR ASPARAGUS
  • 1 cup Panko
  • ½ cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 15 asparagus spears, trimmed
  • ¼ cup all-purpose flour
  • 2 large eggs, beaten
Steps
  1. Preheat oven to 425 degrees F.
  2. Line a large baking sheet with parchment paper or lightly oil pan.
  3. In a large bowl, combine Panko and Parmesan; season with salt and pepper, to taste.
  4. Place ¼ mix in one flat bowl and reserve the other ¾ in a second bowl. Set aside.
  5. Put flour in plastic sack.
  6. Cut asparagus in half (should have 3 to 4 inch spears, tops and bottoms). Rinse spears and place in plastic bag and shake to coat spears.
  7. Working in batches, place 4 to 5 flour coated spears into eggs, making sure to coat each, then place them in Panko mixture and sprinkle with some reserved Panko mix to coat.
  8. Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10 to 12 minutes, or until golden brown and crisp.
  9. Make Sauce: Thoroughly combine all sauce ingredients except yogurt. Gently blend in yogurt. Serve immediately
