Ingredients
- FOR GARLIC SAUCE •
- ¼ cup mayonnaise
- ½ to 2 garlic cloves, minced
- 1 tsp lemon zest
- ½ tsp paprika
- ⅛ tsp cayenne
- ¼ cup Greek yogurt
- FOR ASPARAGUS
- 1 cup Panko
- ½ cup grated Parmesan cheese
- Kosher salt and freshly ground black pepper, to taste
- 15 asparagus spears, trimmed
- ¼ cup all-purpose flour
- 2 large eggs, beaten
Steps
- Preheat oven to 425 degrees F.
- Line a large baking sheet with parchment paper or lightly oil pan.
- In a large bowl, combine Panko and Parmesan; season with salt and pepper, to taste.
- Place ¼ mix in one flat bowl and reserve the other ¾ in a second bowl. Set aside.
- Put flour in plastic sack.
- Cut asparagus in half (should have 3 to 4 inch spears, tops and bottoms). Rinse spears and place in plastic bag and shake to coat spears.
- Working in batches, place 4 to 5 flour coated spears into eggs, making sure to coat each, then place them in Panko mixture and sprinkle with some reserved Panko mix to coat.
- Place asparagus in a single layer onto the prepared baking sheet. Place into oven and bake for 10 to 12 minutes, or until golden brown and crisp.
- Make Sauce: Thoroughly combine all sauce ingredients except yogurt. Gently blend in yogurt. Serve immediately
