Smoky Poblano Corn Pudding
Ingredients
  • 6 medium poblano peppers
  • 1 cup milk
  • ½ cup heavy whipping cream
  • ⅓ cup white sugar
  • ¼ cup all-purpose flour
  • ¼ cup butter, melted and cooled
  • 3 large eggs
  • 1 ½ teaspoons kosher salt
  • 1tablespoon Cajun seasoning
  • 1 (16 ounce) package frozen corn
  • 1 cup shredded sharp Cheddar cheese
  • 1 tablespoon chopped fresh chives, or to taste (Optional)
