  • 1 (14.4 oz / 400 g) can diced tomatoes with chipotles
  • ¼ cup chopped fresh cilantro, plus more for serving
  • ¼ cup chopped scallions, plus more for serving
  • ¼ cup onion flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper or to taste
  • salt to taste
  • Cooked brown rice, for serving
  • Sour cream (optional), for serving
  • Grated cheddar cheese (optional), for serving
