Best Mushroom Stroganoff (Vegetarian)
Ingredients
  • 10-oz. wide egg noodles
  • 4 tablespoon olive oil, separated
  • 20-oz. mixed mushrooms, (we used portobello and white mushrooms), thinly sliced
  • ½ large white onion, diced
  • 5 cloves garlic
  • ½ teaspoon salt, separated
  • ½ teaspoon ground pepper
  • 2 cup vegetable broth, separated (or any kind)
  • 3 tablespoon white whole wheat flour
  • ½ cup 2% Greek Yogurt (option to use sour cream instead)
