Curried Cauliflower & Chickpea Salad with Yogurt
Ingredients
  • 2 cloves of garlic, chopped
  • 2 tablespoons lemon juice
  • ⅓ cup olive oil
  • 1 ½ teaspoons yellow curry powder
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 small head of cauliflower, broken into florets
  • one 12-ounce can of chickpeas, rinsed, drained and patted dry
  • 1 cup goat milk yogurt (or yogurt of choice, cows milk or vegan yogurt will work fine too)
  • ¼ cup unsalted pistachios, toasted and roughly chopped
  • ¼ cup golden raisins
  • ¼ cup minced cilantro
