  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp sea salt
  • Cinnamon-Sugar Filling
  • 1 ¼ cup non-dairy butter alternative such as Earth Balance, softened plus more for the baking dish
  • 2 Tbsp ground cinnamon
  • 1 ½ cups sugar
  • Maple Icing
  • 2 ½ cups powdered sugar
  • ¼ cup vanilla soy or almond milk
  • 3 Tbsp non-dairy butter alternative such as Earth Balance, melted
  • 2 Tbsp strongly brewed coffee, optional
  • ¼ tsp sea salt
  • 1 tsp maple extract
